    Memorial Day Fun

    For those in the U.S. I hope you have a good Memorial Day today. I'm taking advantage of the day to do a good barbeque. Got a beef brisket on the grill and am looking forward to a good 8-10 hours of tending it while enjoying a beer. Probably going to kilt up for yhe afternoon when the heat sets in (I dont like wearing shorts).

    Had to work today but we normally do some form of potluck on holidays. I did up a couple Boston butts for lunch and a couple pies.

    One that was injected with Gunshot and rubbed with Gunpowder. Both smoked with hickory for 4 hours, than low and slow for 18 hours -



    The other is done with a Salt Lick clone -

    Like I said I also through together a couple pies. One peach and the other pecan -

    Those look great Drac. I went relatively small today, just an 8lb brisket. A few weeks ago I did about 20lds of pork, which was way over kill for the number of people I had coming over that day, though my co-workers were happy when I brought enough in for the department to eat the next day for lunch.

    I went with a rub on the brisket and a beer/whiskey/vinegar injection for today. After a good 4 hours of heavy smoke I'll start basting it until its done. Probably around 3pm or so today I'll put some potatoes on the grill to smoke also. Hoping to server around 6pm tonight.

    I wish I had been more prepared and made some dessert to go with this brisket.....I guess I should intro myself sometime as Janders wife. Pretzel salad would have been an epic addition to todays meal!

    Here is the latest. About 5 hours into cooking, with a grill remp about 220 degrees F, and an outside weather temp around 87. Around 5 more hours to go.

    I should have said with a beer or ten.

    Here is the brisket, fresh off the coals. Have it resting now before cutting while I finish up the side dishes.
