    Scottish Cuisine

For all you gourmets, gourmands, and general foodies on the board, the November 2005 issue of Saveur magazine has an article on the modern cuisine of Scotland. It includes a couple of fish recipes, and a recipe for a vegetarian haggis made from lentils.

Dave, I can't get that magazine here, are you able to post the recipes (if they are not copyright)?

You telling me. Give me the real stuff. When I go deer hunting again, I am going to save the organs and make some venison haggis.

It will take me a few days to post some of them. Here's the names of the different dishes:

    Cullen Skink (Smoked Haddock Soup)
Brandade Fried in Beer Batter with Cauliflower Cream
Vegetarian Haggis with Neeps 'n' Tatties
Cod with Chile Oil on a Bed of Clapshot with Fried Arame
Braised Ox Heart with Riesling-Washed Cabbage and Skirlie Stovies
Caledonian Oatmeal Ice Cream with Fruit Compote

Anything in particular you're really interested in?

Thanks dave, I look forward to what you can post.

Our Pipe Band has a ceilidh coming up this Sat night, the Haggis will be piped in with an address to the haggis.
for this event my wife usually makes a veggie haggis an an alternative.

last year many there preferred her haggis, even among those who ate meat.

David, glad you got the oats.
Did i tell you I saw tinned vegetarian haggis on sale in Scotland?
I guess with all the mad cow disease, veggie options are becoming more viable.
