    Test Kitchen Shortbread

    Saw this a week back or so and it was impressive:

    very interesting . admitedly, I am a shortbread purist, but I may have to give this a try.

    I like the bit where they cut the center out because it never bakes properly anyway...classic Test Kitchen manuever!

    My better half uses rice flour instead of cornstarch/oat flour, about 1 part in 5 of the total flour. Makes for a very delicate texture.
    [She also rolls the dough into logs, lets it rest in wax-paper overnight, and slices it as cookies, not as a large cake, so YMMV.]
