    Christmas cakes

    No doubt some of you use a dundee variation of cake for the holiday. Here is a recipe for pound cake which is great for special occasions. 4 fl. oz. cooking oil, 8 oz. soft or melted butter, 16 oz.(pound) brown sugar, 8 oz. white sugar, 5 eggs, 8 oz. chopped nuts, 3 (8 oz.) cups flour, 1/2 tsp. baking powder, 1/2 tsp. salt, 1 (8 oz.) cup, 1 tsp. vanilla solution. Cream oil, butter, sugars. Add eggs one at a time. Mix dry ingredients in a separate bowl. Combine milk & vanilla, then add alternatively to sugar mixture along with dry ingredients. Beat heavily after each addition. Pour into greased & floured tube pan. Bake at 350 F for one and 1/2 hours. While cake is still warm, add a sugar glaze. My glaze recipe is 1 & 1/4 (8 oz.) cups powdered confectioner's sugar, 1 tsp. vanilla, 4 Tsp. (60 ml) orange juice. Any juice would probably work. Turbinado sugar is o.k. too.
    This cake is good now and then. On a regular basis, it can make someone need a new kilt or spend time in the local gym.
    I could also post my recipe for funnel cake. It can be a change for festivals besides the bridies and meat pies.

    My fruitcake recipe is a little healthier. It's 12 oz. can apple juice concentrate, 1/2 cup butter, 1 tsp. vanilla, 3 eggs, 2 cups mixed whole wheat and all purpose flour, 1 cup ground flaxseed, 1/2 tsp baking powder, 1/2 tsp baking soda, 1 cup toasted rolled oats, 1 cup raisins, and 1 cup other dried fruit. Mix juice, butter, vanilla, eggs in one bowl. In a separate bowl, mix dry ingredients, then add the dry to the first bowl. Mix well, then add fruit, oats, nuts if you like. Pour into pan, I use a 9" springform, bake at 350 F for 30-45 minutes. When cool, it can be stored in the refrigerator.
