    Irish Creme Recipe

    I make this every year. Made about 6 liters this year! Wife asked me last night as I opened a fresh bottle how many were left. I think I have about 2 left from what I made last week.

    Irish Cream
    3 Fresh Eggs
    1 Cup (1/2 pint) Heavy Whipping Cream
    1 Can (14 oz) Condensed Sweetened Milk
    2 Tbls Chocolate syrup
    1 1/2 Tbls Instant Coffee
    1/8 cup water
    1 1/2 Tbls Vanilla Extract
    1 Tsp Almond Extract
    1 Tsp Coconut Extract

    4 1/2 Cups of Irish Whiskey or Brandy
    Or
    2 Tbls Whiskey or Brandy
    4 1/2 Cups Water
    Or
    2 Tbls Whiskey or Brandy
    2 1/4 cups of 90% ABV Neutral Spirits (Everclear)
    2 1/4 cups of water

    Mixing sequence is important to prevent curdling. Add the alcohol last.

    Heat 1/8 cup of water to boiling. Add the coffee and let sit to cool.

    Beat the eggs until totally smooth. If you don't, you will need to strain it when done to get the slimy whites out. Then mix in the cream and milk. Blend until well mixed. Add the rest of the stuff except the coffee and alcohol and/or water and blend once more until well mixed.

    The amount of water and alcohol is personal taste. Slowly add each, water first and then liqour unless you are leaving the water out, until you reach the thickness and flavor you are looking for. Add the water and blend again. If making it alcholic, blend in the Whiskey or Brandy until you have the constancy you are looking for. The listed amount is an estimate.

    Add the hot coffee last so it doesn't start to cook the eggs. Stir well once more.

    Store cold and serve within a couple of weeks. This is a perishable item. Shake well when serving as it will separate a bit.

    I have a nearly identical recipe. I make it frequently. My only modification is to use pasturized egg product, instead of fresh eggs. It will keep for a number of weeks, but I've found it never stays in the bottle that long.
