My first one year old RUM!!!!!!!!!
........ is disappointing. Though the pic turned out very nice. You can see the legs on the glass even.
This was kind of an accident. Last year, I made a batch of rum out of dark brown sugar and honey. Unlike my usual rum, it came out very harsh and average tasting (it was very similar to Sailor Jerry), and thus was ruled a failure. Not being one to just throw otherwise drinkable alcohol away, I put it in a barrel to see if it would get better.
Then I promptly forgot about it. A year later, I promptly remembered it.
Now, I can pretend like it was on purpose....
**ONE YEAR OLD RUM** (cue fanfare) Aged in charred American Oak Barrels.
It's still very harsh. It's funny that aging for that long did absolutely nothing to the bite. I put in some caramel to see how it would respond to that (it calms my usual rum down a bit.), and it still was every bit as harsh as before. I'd like to see if it would eventually get better, like whisky or something, but frankly, I needed the shelf space.

Drat. I remember your posting about rum, but did not know/remember that you had put some down to tame it. I wish it could have turned out better for you. You are right though, it photographs beautifully. Now, get the taste to match that photo and we will all come for a visit.
