My Oatcake Recipe
The following is my variation on a recipe that I picked up in Pictou County, NS years ago. Apologies for the Avoirdupois/Farenheit units. My personal preferences are italicized.
While good anytime, anywhere, these are especially good on the trail, in camp or on picnic.
Depending on size, you're looking at 400 – 450 calories each! YUM!
2 Cups rolled oats
1 Cup flour
1 Cup brown sugar
1 Cup chopped walnuts or pecans
1 Cup currants or raisins
2 – 4 Tbs. Molasses (treacle). Substitute cane syrup, corn syrup, honey, etc.
½ Tsp. salt
½ Cup oil, coconut oil, butter or margarine
¼ Tsp. baking soda
¼ Cup boiling water
Combine dry ingredients (except soda) and oil. Dissolve baking soda in boiling water, add and continue to mix. Add in a little more water if needed. Form into patties (warning: very sticky!) and bake in a 375 degree oven for 12 – 15 minutes. Store at room temperature as they're not going to sit around very long anyway!
