Very nicely done! Excellent documentation of the process will be helpful to many, I'm sure.
I concur with the others on the belt.
I must also point out that mink are Carnivores (Order Carnivora, Family Mustelidae), so you have a "three-mustelid pouch", not a "three-rodent pouch"

Well done! The jacket looks great.
One suggestion, I think the outfit would look much better without the belt (the rectangular dress belt buckle and the sporran cantle look crowded together).
