Anyone think of themselves as a hunter?
Searching brings up a bunch of hunting tartan threads, I am talking about freezer meat.
I have some caribou and some moose in my freezer right now, neither are particulary exotic in Alaska. 'bou shank makes an excellent broth if you like your French Onion Soup on the delicate side. I use two slices of provolone, a slice of swiss and a pinch of asiago in each tureen.
Bird hunters welcome. We raised chicken on the farm when I was a kid and I am pretty well put off poultry for life; if you haven't overdosed on feathered game already smoothbore hunting is plenty cool as a pursuit.

Venison, quail, pheasant, goose, turkey, squirrel, salmon, redfish, sea trout, grouper.....
Man, when I was a kid that wild turkey was a little too wild, but these days it makes one appreciate what a true wild bird tasts like.
Though we always raised calves, hogs, sheep and chickens etc, I really like fish and game. None better.

My mouth started salivating. I love caribou, haven't tried moose. I tend to fill the freezer with Venison, Quail, Waterfowl, and turkey. I try to keep a shelf dedicated to Steelies, coho, and my all time favorite Walleye.

Yup, I hunt mainly feral hogs and deer. We try not to buy commercial meats, and eat only the clean, healthy, non-hormone-injected, non-genetically altered or cloned meat of wild game. Call it "organic" if you will.
Feral hogs, if you choose the right ones (i.e. sows or young boars, not the larger/older boars) are VERY tasty. I have a hard time eating commercial pork now, having developed a taste for wild pork. These hogs are an invasive species, non-native to Texas, so there is no closed season and no limit on them. A lot of farmers/ranchers actually will pay people to come get rid of them.
While White-tail deer are plentiful in my area, we also have Axis deer herds all over the place. These are also a non-native species (originating in India and Sri Lanka), so they are always in season, and there is no limit. Axis venison is very healthy and tasty. Because Axis deer are incapable of putting on intramuscular fat, their meat has a natural fat content of 0.2%, which is legally "fat free". And unlike White-tail venison, it has no gamey flavor. It tastes much like lean beef.
So I keep my freezer stocked with wild pork and venison, in all manner of cuts and ground meat and sausage, and that's mainly what we eat for our meats.

Color me jealous guys, I would love to have a full freezer but don't. I follow my dogs so I have plenty of quail, grouse & pheas. Can't shoot enough doves to make it through winter. The kids who normally bring me 3-4 deer didn't and my I'm out.
Tobus, how about I meet you for New Years and I"ll help you out with that pig problem!

I don't hunt but I help out the hunters with both knives and making sausage and jerky. I have some venision and wild pig (shot in the guys backyard) ready to make some summer sausage ans snack sticks.

Quail and Cotton tail have been my main hunt since I was but a wee lad. Although, I have also done squirrel which is yummy. I have hunted coyote too, for their pelts. And I am going on a pig hunt in february I believe with a friend of mine.
And the best fresh water game fish there is...CRAPPIE! Delicious!!!!!
i've also had bass, trout, cat fish, sun fish, etc...but CRAPPIE by far is the best!
