    Salmon

    How do you like your salmon?
    Right now, I have a whole bunch of smoked Alaskan salmon, and have been trying it with assorted fixings... kind of like I would use tuna.

    Also like sordfish, as well as, shark.
    I tried to ask my inner curmudgeon before posting, but he sprayed me with the garden hose…

    I like to plank grill salmon. Soak a cedar plank in cold water for about a half hour (more is alright, less is not) and put the fillet on it and grill few just a few minutes. The cedar gives a nice woody flavor and the cold water in the plank steams the fish. I imagine any other similar fish, like sword or shark, could be done the same way.

    I enjoy mine with small red potatoes, green beans and dill sauce.

    I like the cedar plank as well. I soak my plank in salt water though and do a dry rub. I used to mix my own, but found that the Montreal Steak Grill Mates is so close to my blend I just started using it.

    I used to smoke my salmon and tuna at home back when I lived where I could catch my own. Throw in some crab cakes and a six pack and there's dinner. I figure that beer counts as a vegetable and bread.
    The grass is greener on the other side of the fence...and it's usually greenest right above the septic tank.

    Once it is smoked your options are pretty limited.

    You can make a spread with some cream cheese.

    OldHikers idea sounds yummy, I will try that.

    If it is cut in small enough pieces I like to just eat like a candy bar.

    I just happen to have the tins of smoked salmon. I don't mean to limit the discussion to smoked salmon. How ever you prefer it is fine to discuss.

    Smoked salmon I just eat as is and I'll put it beside whatever I like, usually something green and some rice. recently I've been wondering how it might taste in a simple garden salad with a vinaigrette dressing.

    For fresh salmon I tend to baste it in olive oil and cover it with garlic and salt and drop it on the grill. My wife can't leave the fish alone though and I'm the one who has to grill it. She pokes at it until it falls apart and then she can't flip it. You've got to leave the fellows alone until one side is done and flip them once. The best part of this is that there's usually some tasty (and fatty) but crispy salmon skin to crunch on too

    In college I would put salmon between two cut halves of a sesame bagel with mayonnaise and cucumber to make a fantastic sandwich.

    Grilled with olive oil ,lemon and pepper in foil, skin side down till ready....yum!
