Pancakes, Waffles, Flapjacks, Etc.
How do you like yours?
I was just thinking about pancakes and waffles smothered in syrup and butter before writing up the post, but I've also used pancakes to wrap assorted foods and fillings. I've also eaten pancakes and waffles plain.
Might as well throw in what ever else you like to eat with pancakes etc.
I tried to ask my inner curmudgeon before posting, but he sprayed me with the garden hose…

Cane syrup (ribbon cane not sorghum)
Molasses
My mama's apple butter
Maple syrup

if I want them sweet:
marmelade (orange, lemon), lemon curd or preserves (blueberry, blackberry, apricot)
or
a little sugar in the pan, some apple slices and the dough on top, turn over, when the apples are caramelized.
and hearty:
fried mince meat with chives or just bacon + salad on the side

I gotta say, IHOP got me spoiled on their cinna-stack pancakes. My wife found a recipe for the filling and glaze, and so if we make pancakes, that's what I do with them. The cinnamon filling goes in between the pancakes, and the glaze goes on the top. When it all melts, it's heavenly.
Of course, eating like that is why I'm on a diet now.
If for some reason I can't have 'em like that, I just drench them in butter until they can't absorb any more, then top with maple syrup.

If its fruit you want I do put up both pear and fig preserves each year. They are good with pancakes as well.

I've had pancakes at a couple of restaurant that have creamed chipped beef on them. It's pretty good.

Living in the great Southwest, I'm very partial to green chili. No, not on my pancakes, but, on my eggs and hashbrowns, and then, enjoy a pancake with butter and warm syrup. Something about topping off hot green chili with something sweet. I've always told folks that my favorite scent, cologne, or such, is something about half way between saddle leather and pancake syrup.

In a skillet, melt some butter. When it bubbles, turn off the heat and add brown sugar. Whick until it melts, then add sliced bananas and a little lemon juice. Serve over hot waffles.
Thickened, sweetened blackberries over pancakes are the best, unless you've got some apple butter. Homemade apple butter, that is, and not the kind that has Red Hots in it. Real, homemade apple butter that somebody's Granny made. Yeah.
