Actually, the Oregon State mascot is the Beaver (also the State of Oregon's official state animal). The football stadium at Oregon State University is currently known as Reser Stadium, after the Reser food company (also based in Corvallis, Oregon). Speaking of foods, and beavers, I am reminded of line by Roger Daltrey (of The Who), who during an episode of 'Extreme History with Roger Daltrey', which centered on the fur trappers of the 19th century, "ever eat a beaver?" .
