Pin head oats and red eye gravy?

Grits and red eye gravy is pretty standard southern fare.
A while back I thought I would try it with Scottish pin head oats - awesome!

Any time I fry up ham, Scottish back bacon, Canadian bacon or American bacon with some of the fat poured off, I dump my cooked pin head oats in the skillet after the meat has cooked, stir and serve.

I hate to let tasty things go down the drain and this seasons the oats up real nice.
    Any other ideas?

Pants is only a present tense verb here. I once panted, but it's all cool now.
