English Muffin Bread
English Muffin Bread (English Muffins in a Loaf)
Ingredients:
6 cups of all-purpose flour
5 teaspoons active dry yeast
1 tablespoon sugar
2 teaspoons salt
¼ teaspoon baking soda
2 cups milk
½ cup water
3 tablespoons cornmeal
Directions:
Combine 3 cups of the flour, yeast, sugar, salt and soda.
Heat liquids until very warm (120-130°F).
Add the liquid to the dry mixture, beating well. Stir in enough more of the flour to make a stiff batter.
Grease two 8½” x 4½” bread pans and sprinkle with cornmeal. Divide the bread mixture in half and put into each pan. Sprinkle the tops with cornmeal.
Cover and let rise for 45-minutes.
Bake at 400°F for 25 minutes. Remove from pans immediately and cool.
Slice and toast.
Microwave Oven Directions:
Reduce flour by 1 cup. Mix and let rise as directed above. Microwave each loaf on high power for 6½-minutes (no longer). Surface of loaf will be moist, flat, and pale. Allow to rest 5-minutes before removing from pans.
