Whip-stitching (like you see on the end of a wool blanket) would work. Otherwise, just leave it. Wool uniforms of the past were often left with "raw" edges, as are many of today's reproductions for reenacting. Wool fabric with a raw edge holds that edge well, and hardly frays at all....
