I believe most Argyle jackets (and the Crail; at least the one The Kilt Store sells) have epaulets on the shoulders. This is because the jacket originated from a military jacket. I'd imagine these could be removed, or you could possibly request they not be added if you're ordering the jacket to be made for you. Since you're tall, make sure you order your size jacket in a long; the shop you looked at may have just had a regular size.

If I recall correctly, some of the pictures of jackets in the jacket thread from a few weeks ago showed jackets without epaulets. I quite liked a few of them myself.
