Bonnet, but they're not being worn like any known example. Mid-18th century bonnets tended to be smaller and were worn more like a golfer's cap than the floppy beret style seen in the show.
By golfer's cap/cheesecutter I mean a bonnet was pulled forward to form a peak rather than dragged down the side of the head - though who knows, in heavy wind you might want to protect the side of your head in such fashion.

The ones that Gloria made for the show were specified for the show and larger than what she usually makes. Production also 'dirtied and wore everything out' so they are also a lot more flimsy. There are not a lot of drawings from that period but here is one where the wearer is wearing to the side.

A bit to the side yes, but not pulled down the side of the head like a rastafarian hat. That image is also from the 19th century - McIan's 'The Clans of the Scottish Highlands' (1845).
Dougal should also have a wig, powdered or otherwise, for when he's out and about. Way too many bald heads in period productions from ancient times through to the modern era. I know plenty of people shaved their hair, generally for lice reasons, but the wealthy at least wore wigs and the poor wore hats or coifs in earlier times.
It's like the discussions I've seen over the Vikings tv series. Plenty of evidence exists for clothing, hairstyles and armour yet it all gets ignored for a fantasy look for whatever reason. At least the costuming in Outlander is close to the period, if somewhat more akin to what the poorer highlanders would have worn, but the bonnet - this was a major fashion item and one that existed across Scotland. It would have been nice if they had got that part correct.

I wasn't sure whether to put this here or in the weapons sections. Please feel free to place this in the appropriate thread. April 4th I watched Outlander. In it a major character was armed with a D-guard Bowie knife. I was just thinking that with the plethora of weapons floating around 18th Century Scotland, could they not come up with something more appropriate than an American Civil War era dagger???
