Leftover Haggis
Well I have 2lbs of leftover haggis out of 4lbs that I purchased for a Hogmanay party. This morning for breakfast I am having haggis and eggs, so I still have almost 2lbs of leftover haggis. Anyone know of any leftover haggis recipes and how long it will stay good in the refrigerator?

Well, if you were near here you could be a humanitarian and share it with the local coyotes and ravens. They gotta be of Scot's blood (tricksters) and long denied their traditional fare...;-)

I have never had that much left over!! Being on my own, I always buy small ones (yes, I have Haggis about twice a month!). I can only offer you one suggestion and that is to beat the cold left-overs into a bowl of low-fat cream cheese so that it almost becomes a coarse paté. The result makes a gorgeous sandwich filler which I have kept (in an air-tight container) in the 'fridge for up to a week. It's a safe bet that it would do equally well as a jacket potato filling.................mmmmmm, must try that next time!

When me & the wife were in Edinburgh a few years ago, I had a salad with deep-fried haggis balls. It should be easy to make. Chill the haggis, roll it up into balls the size of golf balls, roll in an egg wash and then in some breadcrumbs, flour, or maybe cornmeal. Fry 'em up and eat 'em with some mustard or chutney...
I wish I had some leftover haggis right now.

I usually freeze the leftovers in portion-sized pieces. It nukes up really well, especially for breakfast. I once tried a recipe for haggis-stuffed chicken breasts, and I have to say it was terrible.

It's a Southwestern thing ...
... but when I lived in El Paso, where bakeries stock more tortillas than bread loaves, I would occassionally used my leftover haggis as burrito filling. Add some cooked rutabagas and papas (potatoes), and you've got a scottish burrito.
