That is actually what folk would have done. Peroxide is really good on getting out blood because it reacts with the iron in the heme. Not sure about wine. Before giving up, try one of the new detergents with enzymes -- they work on a lot of organic stains.
My mom and grandmom, however, saved items with wine or tea stains and once a year did just as you suggested, staining or "dyeing" the whole garment to match. This was a favorite on rugs which always seemed to catch drink and food.
BTW, keep away from heat, salt and vineagar as they will all set the stain.
