That's a good idea and they are half the price of a PC. I like the officer's one best but I wouldn't feel comfortable wearing it so I'll see if I can find a SNCO one in a fat, I mean LARGE, enough size. On a related note, I have seen people wearing their miniature medals with civilian attire. Is there some kind of rule for/against it that anyone knows of?

A mess jacket is easy to convert. Just remove the rank insignia and replace the buttons. You can wear any miniature medals you were awarded with civilian attire.

Converting the USMC dress jacket for formal kilt wear will require tailoring. Here's how the US Coast Guard dress jacket is converted:

I often wear my minutures (or half of them anyway) and sometimes I wear 1 full size one, sometimes I will wear a ribbon, depends on what I am wearing and how I feel.

All branches of the US military have weight standards so it will be difficult to find a mess jacket in an especially large size.

A better idea is to get an Eton jacket, which is styled like a mess jacket. It comes in sizes from 34 to 54 and sells for around $40:
