There is nothing like a good wet grinder to get a cutting edge up to snuff. I use chisels a lot in my line of work, and anything short of razor sharp just won't do. For years I used diamond hones and a hand strop, but several years ago I bought a good quality wet grinder. It has a 1 1/2 x 8" 150 grit dry stone for removing nicks, and a 2 1/2 x 10" 800 grit (interchangeable with 1200 or 1500 grit) wet stone that turns at only 400 rpm. There is also a 1 1/2 x 10" leather wheel for final stropping. Edges done with this machine are so sharp that you have to be careful how you look at them lest you cut your eyeball.

I know you need at least an eight inch better ten inch wheel to sharpen a chizel, but wouldn't a smaller wheel work alright for a Sgian Dubh?

I tried to ask my inner curmudgeon before posting, but he sprayed me with the garden hose…
Yes, I have squirrels in my brain…

i've sharpened plenty of chisels & plane irons on a 6" wheel.
slow wheels (water fed) gives a good non-burnt edge, but still need to be sharpened with a hone

Sure it would, if a knife jig is used. Was I you, I'd call a few custom wood shops and ask them if they can help you out. Most master woodwrights that I know are very accommodating. It wouldn't surprise me a bit if you got it done for free.

Ya, you're right on that knife jig for me. I'm blind and I can't do anything without a jig... Almost need one to cut my fingernails. LOL Thanks for the advice. I'm slowly starting to think I might want a Sgian Dubh something like what they're talking about back there. I don't leave the house without a pocket knife... it's on my keychain. LOL!

A knife is not a knife without an edge. I have no small children so that even my two display Bowie knives, my sgian dhu, and my dirk have edges. I make an exception for my carbon steel swords - a baskethilt and a 2-handit claymore.
