My wife and I honeymooned in Scotland in August 2001. We spent the first week in Edinburgh in a B&B on the Royal Mile. It was during the Fringe Festival and it was brilliant.
The second week we did a self-led hike from bottom to top of the Isle of Skye (though not the whole distance). We booked everything through a local outfit who planned each day's hike and booked stays in B&B's for us. They supplied good quality local maps, arranged for local transport and baggage delivery each night. They offered several different routes. One word of warning: on a couple of occasions it took some time to translate the instructions from Scottish to Canadian! Who knew that a "burn" was a "creek"??
We had one of the best meals of our lives at a place called Coruisk House in Elgol on Skye! I highly recommend it. http://www.seafood-skye.co.uk/
