I have quite a bit of equipment but don't really do anything with it anymore. Oddly enough I've been pondering getting out my old Lionel trains from when I was a kid and starting something in "O" scale. As I get older HO and especially N are just too darned fiddley for me. Problem is I don't have room for anything "good" in O. 
I need to add on to the house I suppose. 
I'm attached to the O scale stuff but not so much the HO and N. Perhaps I should sell it. If you've seen the prices of quality O stuff these days you'll know why.

I've got the Suncook Valley RR; "The Blueberry Express" in a back room in the barn. The roof leaked and I've got some major repairs to do. I'm trying not to think about it.
Ditto on the Shay, it's beautiful. They used to run them up country in the White Mts.
Modest indeed, Panache. I think not. The "Welcome" banner totally rocks!

I am somewhat of a model builder myself, and was published in the June 2004 Fine Scale Railroader magazine.
Now there's an understatement! Getting published in Fine Scale Modeller is quite an achievement

I suggest looking into narrow guage O scale then. Bachmann makes some excellent equipment in On30 (30" narrow guage track age) which in scale is equivalent to HO scale track.
And since narrow guage equipment was smaller it's easier to model O scale in tighter spaces.

Before I went on active duty I belonged to an NTrack (N scale) club in California, we had an enormous layout, must have been sixty feet long by twenty-four feet wide.
I agree with Chris, the On30 is the way to go, especially if you are older and have a limited amount of space to work with. However, if you live in an area that has moderate winters and have a suitable backyard then a garden railway would be nice, and there are many opportunities in that spectrum including running your On30 trains outside, but remember this all must be done kilted, because this is all about the kilt.

Other models I created
These are some of the other models I created. The V-Dump car is a cheap plastic G-scale car that I highly modified and weathered. The gondola and flatcar are all the same except I scratch built the wood sides and wood deck. The industrial locomotive is an LGB train that was highly modified as well. I removed the two exhaust stacks, undersized engineer, drilled out the side vent holes, and added a brass/wire mesh grill. There are many more things I need to do to this locomotive, but lack of space and time is not allowing me to continue my hobby, that and the fact that I am retiring from the Army in fifteen months has my thoughts elsewhere.

I have one comment to add about your water car. I see this all the time... water containers (like steamer tenders), but no evidence of water...
I make a mixture of 50/50 water and white glue and paint strips of it down the sides of my tenders to look like dry water stains, and use the same mixture slightly "pooled" around the areas where I want a "wet" water look as it dries slightly shiny.
