I was on a Carnival cruise recently which was also attended by a friend from Edinburgh. He wore his entire kit to formal night (Argyle, black bow tie, etc) and was the absolute hit of the evening. He looked great.

    Been there, done that.

It'll go in; just make it work. Black tie is black tie. Formal is formal, so don't try to get by. Either dress up, or dress down.

I have found that there are various levels of dress on dress up night on a cruise, and I've gone with both a PC and a doublet. Just make 'em fit, have fun, and be prepared to have your picture taken with a lot of women!

I say if you really want to wear the kilt (of course you do), wear it and go all out. skimp on other clothes. I would assume with the amount of kids that normal day to day would be casual. I'm sure you can get away with one less shirt and shorts, since you might be on the deck with no shirt and bathing suit shorts half the time, and can re-use the shirt you only wear for 1/2 the day. And if not most do offer laundry service.
