The leather that forms the main body of the sporran is "softy buffalo." You can see a photo of the back of the sporran in photos above.
As for attaching the goat to the soft buffalo, I simply made the front panel two layers. I actually used a thin kidskin or kangaroo for the front panel, now that I think about it. (I've been making this sporran for over six months--between the boots and shoes I ordinarily make)
As for attaching the body of the sporran to the cantle(s), I used a technique called "round closing." This has the great advantage of being one of the strongest seams that can be done (some say the strongest) and results in no visible stitching on the cantle. Again photos and descriptions above detail not only one of the seams that holds the bag to the back cantle, but also the round closing techniques...and tools...that are used to do that.
