Thanks to everyone for the suggestions so far. The main question I have is should we plan on booking lodging in advance? Or play it by ear?

I notice that you are visiting in May, not April, I should have read your post more carefully. Any way, generally speaking May is the start of the holiday season so booking ahead would not normally be bothered with. However we are not in normal times and is predicted that the great British public are going to be holidaying at home this year, whether they will be able to afford to is yet another consideration.
I do not have a diary in front of me, but be aware that May is a time for public holidays and it is also not unusual for Scotland and England to have different times for theirs! Do a bit of research as, certainly in Scotland, hotels and B&B's tend to fill up during public holidays. So, do you book in advance? If its going to be during a public holiday then yes, otherwise, no.

From a travel book I have, the first Monday in May is a public holiday... that would be the day we arrive. It would also be the final day of the holiday, meaning back to work the next day. I guess it doesn't hurt to at least book our first night anyways.

My diary is in my car at the moment which is fifty miles from where I am, so I cannot say with any certainty about public holidays. Be very aware that Scotland can and does have different holidays to England------sometimes!

Congrats on the obvious,
suppose a lot of what you do will depend on what you want to do/see.
In Glasgow the Kelvingrove museum is ok, and small enough to see quite quickly, Good opportunity to go down Byres Road and Ashton Lane after, nice pubs restaurants and coffee shops so not demanding. If you can you might want to go up the Glasgow tower at the science centre if its a nice day good view of the city.
In Edinburgh The old town is obvious, Try the Castle, expensive, holyrood palace and the Scottish Museum in chamber street, free. Get a tour bus of Waverley Bridge you can have a look round and jump on and off
