I think it may have been a military feature.
I chose to not have them on my kilt jacket, and no one complained.
I tried to ask my inner curmudgeon before posting, but he sprayed me with the garden hose…

They were originally used to designate military rank. What's currently thought of as an epaulette is more properly a 'shoulder strap' used to hold the epaulettes in place.
I prefer jackets without them as well. The Wizard's suit jacket is exactly my style. Now to find the cash...

I believe, they started out being used with military attire. They were used for the above. The were also used to retain,Baldrics, "straps" & Sashes.. Since much our "Scots attire" derives fro a "military" look, ergo the epaulets.
In modern times ( uniform ) They "held" my Rank, etc. I have used them to hold my Cord, beret, or if in "Dress", my gloves.
