Baked Bananas with Cinnamon & Rum
3tbsp brown sugar
3bananas
pinch cinnamon
Jamaican rum
vanilla ice cream to serve
Preheat grill to high.
Peel & cut bananas in half lenthways, lay them in a shallow baking dish & sprinkle with half the sugar & cinnamon, drizzle with a slug of rum, then sprinkle over the remaining sugar & grill for 5mins, until you have a bubbling, golden brown sauce, serve the bananas with the gooey sauce on top & a good scoop of ice cream. For children just omit the rum.

Here's a variation that I sometimes do:
In a sauce pan melt 2 tbs. butter or margarine, add the brown sugar and rum a and bring to a boil. Remove from heat, add cinnamon and sliced, ungrilled bananas, stir to coat bananas and serve on pancakes.
