If interested in history...
Salisbury has some great historic sites if you're into that sort of thing. Several really old churches and houses including the law office where Andrew Jackson read law as a young man. This area was heavily involved during the Revolution. Check with the public library or the tourist board.
Dan Nicholas Park is a nice place to get out of doors.
If you're looking for something a little more lively, get on I-85 S and drive to Charlotte- lots of museums, performance spaces, restaurants, shopping, and pubs.
