I don't know that I could bring myself to do that to a Guiness but I've never tried it so I really can't say.
As for ice cream and alcohol, I know that works! In the Canadian Navy we used to have "Moose Milk" every Sunday morning when we were in a foreign port (to help with the recovery from Saturday night). It consisted of 1qt. chocolate ice cream, 1qt. vanilla ice cream, a bottle of Kaluha, a bottle of rum (and whatever clear alcohol you felt like using). The alcohol encouraged the ice cream to melt and it made a milkshake to wake up to.

Well put...and applicable in my case. I'm in rough shape without Lactaid, and sometimes even with it.
The grass is greener on the other side of the fence...and it's usually greenest right above the septic tank.

They have those around here at the Alamo Drafthouse Cinema, my wife likes them. I think they taste OK, but would rather have my beer straight and one of the Alamo's "5 Dollar Milkshakes" for dessert.

I don't know that I'll ever give up Guinness for another, but I have been known to occasionally "cheat" on it, most recently with a Breckenridge Vanilla Porter...delicious!!!

That would be Cannery Row, if memory serves (which it doesn't always).
Waste of both ice cream and Guinness, if you ask me. However the Grasshopper version is killer -- vanilla ice cream, creme de menthe, and c de cacao (sp? sorry if I've murdered those).

I tried a Guinness float several years ago. I decided that the Guinness didn't do anything for the ice cream. The ice cream definitely didn't do anything for the Guinness.

We have a second-generation ice cream maker in town whose concoctions are second to none. For a few weeks every spring he makes Guinness ice cream. It's delicious, cooling and meant for fun, but he'd be the first to tell you, it's no substitute for the real deal.
