You can knit two at a time on cable needles, then they're both the same length.
I know a lot of people who swear by this way of knitting for hose/socks. You also do not get the "one sock syndrome" that way. Personally, however, I'm a fan of double pointed needles and I like to knit one at a time the old fashioned way...toe up or top down, doesn't matter to me and my trusty tape measure!
Can't wait to see the hose!
