If you are inclined to wild edibles, thistle stalk is pretty good. Similar to celery but sweeter.

Really? I am amazed. Do you need to cook it or eat it raw? Strip the outer skin or eat as is?

    Regards

First, dig up the root. Using the root as a handle, shave away the prickley leaves around the base and the darker green outer skin to reveal the light green stalk. Then you can eat it raw in a salad or cook it in stew or any other recipe that calls for celery. Thistle is best gathered before the stalk gets too tall and well before it blooms as it gets tougher the bigger it gets.
    Bon Appetit!

Interesting that thistle stalk is edible. Must try it some time (if I can find a thistle before it dries out).
Of course Robert (Ancienne Alliance) is just showing off – but then he has good reason to, since Chrystel always looks good with tartan!

There were lots of thistles on the trail, backpacking in the Sierra Nevada last year. I quite enjoyed them. I didn't know the stalks were edible, though!
