Clearly there is something missing in my head!! I've never thought to put bacon in the egg salad.
I love an egg salad with finely diced sweet onion and just a little chipotle.

Butter 2 slices of seed bread, lay on some shredded lettuce some sliced tomato then pile on some thinly sliced cold roasted Bison, that was cooked rare. Add 2 strips of bacon that has not been overcooked, then pile on some braised onions and slather on creamed horse radish. Top with the other slice of buttered seed bread.
Open a bottle of Scotch Angy Ale and enjoy.

Oh, Good G*d man! Of all the choices in the Old Pueblo, you chose Eegees?!?! How about a Lindy's burger, or a Bisonwitches Wildcat with a breadbowl soup, or a Sausage Deli Omar, or an Ultimate Roma from Roma Imports, or...d*mn it, now I'm hungry again.

Of course, if you wanted to add a few slices of really crisp bacon, I certainly wouldn't complain.
Seems to me, nobody complains about bacon. And, no wonder!

2 very thick slices of buttered seeded wholemeal bread with at least 6 slices of back bacon grilled quickly untill the edges are crisp. Absolutely nothing else added so as not to spoil the taste of the bacon.
But only now and then for me, got to watch the old cholesterol.

For me this is easy as I have eaten thousands of peanut butter and honey sandwiches. I prefer it on white Wonder bread with a large glass of ice cold milk. A complete staple of my diet for almost 40 years. My wife shakes her head when I don't know what to eat since I invariably go with my standard fare.

I vote for the picnic basket at Lindys. Nothing like potato salad on a burger.
