Smoked salmon I just eat as is and I'll put it beside whatever I like, usually something green and some rice. recently I've been wondering how it might taste in a simple garden salad with a vinaigrette dressing.

For fresh salmon I tend to baste it in olive oil and cover it with garlic and salt and drop it on the grill. My wife can't leave the fish alone though and I'm the one who has to grill it. She pokes at it until it falls apart and then she can't flip it. You've got to leave the fellows alone until one side is done and flip them once. The best part of this is that there's usually some tasty (and fatty) but crispy salmon skin to crunch on too

In college I would put salmon between two cut halves of a sesame bagel with mayonnaise and cucumber to make a fantastic sandwich.
