Double dipped French toast
Thick slices of homemade bread
egg
milk
vanilla flavor
cinnamon
1 shot of a sherried whisky (MacAllan or Balvenie Double Wood are what I use)
pancake batter made up thin
mix your egg, milk, vanilla, cinnamon, and whisky. Dip bread slices in mixture. Then dip in thin pancake batter. Toss on a hot cast iron griddle until fully cooked. This does take a bit longer to cook than regular french toast but it is worth it. Serve with butter and syrup, powdered sugar, or homemade apple butter.

Back in college (University of Scranton), there was a restraunt called Brother Man's (sadly gone now) that was luckily located between the pubs and my house. Brother Man's was open (wisely) from 8:00 pm till 3:00 am. Anyway a regular 2:30 am pick up was their "Jew Delight" (their name not mine, yell at them for political correctness) a foot long pastrami, corned beef, swiss cheese hoagie w/ spicy mustard and peppers, and dripping oil. Half before bed, half for breakfast. Hangover helper.

I had this last night with some tortilla chips...
Corn and Black Bean Salsa
1 can corn, drained and rinsed (or about 1 1/2 cus fresh off the cob)
1 can black beans, drained and rinsed
1 medium onion, chopped (about 1 cup)
5 or 6 roma tomatoes, peeled, seeded and chopped
1 bunch cilantro, stemmed and chopped
5 or 6 cloves garlic, minced or smashed
2 or 3 jalapenos, depending on your preference, chopped
juice of two lemons, some zest too if you like the extra zing
salt, to taste, none of that iodized stuff, it throws off the taste
pepper, freshly ground, to taste
crushed red pepper flakes, for extra kick if you like
Mx all ingrediends and chill overnight.

Speaking of late night college fare... in South Bend Indiana there's a small establishment that goes by the name of "Borracho Burrito" where for a VERY nominal sum you can have a burrito that's almost the size of a football...
