Mole (moe-leh) is a wonderfully complex sauce that originated in the Mexican state of Puebla & it contains both chile peppers & Mexican chocolate, plus quite a number of other ingredients. When properly made it is a FABULOUS sauce that can easily rival the most complex French sauce. HIGHLY recommended!!!

Good mole is really good. Even bad mole is pretty good. It is a bit like, well, kissing a cute girl. Even if it aint the best kiss in the world, it is better than no kiss at all.
And I personally like good Latin sauces better than French ones. Earthy vs rich, no contest. Most French food leaves me feeling like Mr Creosote and his wafer thin mint.

Oh, yeah, like the hot - 'course, my hot might not be your hot, but yeah, it's a good meal if it makes your nose run - and the wife and I both enjoy spicy Latin food (and Asian, and African...).

If I say it's hot, it would blister someone else. If my husband sees me sweatin, he knows it would burn him up!

I usually drop a can of green chilies in my brownies. I don't think cheese would add anything.

It's almost time to start the peppers in the basement under the lights. If you save some seeds from last years plants and then replant using them they come back a little hotter each year. I always have some Cayennes, Bonnets and Jalapenos in the garden in the summer. I won't order anything less than "Hot" when it comes to chicken wings but last month I was in a place that had Habanero wings and they were even too hot for me. Then sometimes I get carried away making chili and my wife won't eat it because I put too much heat into it. My stepdaughter gave me a great Christmas gift this year. It was a box with 4 sauce bottles in it made with Jim Beam - Hot, Chicken Wing, BBQ and Steak. I'm waiting until grilling season to open it up.

Alas, I shall never know, as cinnamon is a major ingredient in mole- and I don't like turning red, itchy, and bumpy.

I had that same stuff for the first time in Hamburg last month. It was quite the surprise, but I liked it

My sweet/chili preferences are habanero peanut brittle and habanero jelly on english muffins.
