Re: So begins the Candy holidays

Thnaks, Drac. I'm trying out a small selection of salts and spices from Spice Market in Pike Place, Seattle. I hope it's good quality.

I love to shake red pepper flakes over chocolate ice cream! Uh oh, now I'm in trouble!

Re: So begins the Candy holidays

Well got 6 centers done out of 24. Ran out of storage bags after that

Have the experiments still to get figured out. Will lay in supplies today after work and get more done this week. Shooting to have them done before Thanksgiving so I can take them home during vacation.

Really got to make a lot of the habenero ones as I always get request for boxes of these but I also thinging the Dirty Irishman will go the same way. The flavor profile seems to be what the chili heads go for.

And no I don't sell or take orders for candy. I tried that years ago for holidays and it was a major lose for me. I normally make a few boxes extra each year and send out to vendors I work with during the year as a way of saying thanks.

    Got everything finished up -

    Packing everything up -

Boxed up and ready for the receiver -

Added some fudges I made in the past for a couple people. They seemed to have enjoyed it so I made it for a couple people who I know like it hot They pale one is milk chocolate chipotle with pecans. The other is dark chocolate raspberry chipotle. Funny how chipotle goes so well with both flavors -

Wow!!! That's almost too pretty to eat! The Argyle pattern on the rum one is awesome! How do you even do that?

    Red caps with little brushes

They are screen printed transfer sheets done in cocoa butter. You place them in a 2-part mold and where the chocolate hardens it sticks to it.
