Good hearty multi grain pancakes or an ancient grain bread done as french toast. Molasses or a good berry syrup. When I travel I like to find the good breakfast places and scout out the double and triple stacks with hash browns and sunny side up eggs. Seattle has quite a few good ones especially 5 Points head banging bar and breakfast. Gotta love a place where people are drinking whiskey at 6 am on one side and eating pancakes on the other.

The only pancakes I ever liked were buckwheat silver dollars, so dense that they couldn't absorb anything.
Waffles are my thing, even though I have to eat gluten free ones. Even the best ones I've found are rather dusty and gritty, but I eat them the same way as regular ones. Visible clumps of butter in each and every divot, then drowned with Mrs. Butterworth's syrup. Nothing else will do. No fruit, no fruit syrups, no Cane syrup, no maple. I gotta have that couple of thousand calories of artificially flavored, overly sweet, thick, gloppy Butterworths.
I only eat waffles about two or three times a year.
Dang... now I want waffles!

We have a sugaring house here in southern New Hampshire called Parker's Maple Barn.
They have obviously homemade real maple syrup and the best pancakes around.
Aside from the usual buttermilk and buckwheat, they have a pancake of the month.
So far their cranberry pancakes are my favorite (with pumpkin running a close second).

I have a nice antique waffle iron (real iron!) that I use on the stove. I'm more of a waffle guy than a pancake guy, except in a couple of cases. My main faves for toppings are either maple syrup (Grade D/Extra Dark -- I'm a Canadian!) or chokecherry syrup from our own bushes. Usually I'll alternate one and the other while I'm packing my paunch with waffles. Sometimes I'll make my mother's recipe for orange syrup. And apple butter -- made with maple sugar and don't call me Granny!
When we had a lean week in my youth, Mum would make "Waffle Supper" and we'd use a butter and brown sugar syrup on them. That still makes me feel good a half-century later.
Pancakes? Only like the sourdough pancakes I got as a kid, for breakfast. Same syrup choices as above.
I have some recipes for Vietnamese pancakes that I'll eat anytime, also make dosas with some regularity, and a zucchini fritter recipe that uses up loads of shredded dried zucchini that we save every year. Generally I dunk them in nuoc mam and have them with lots of beer. Which can make a great breakfast, if yer in the mood...

I don't like pancakes and I really dislike maple syrup to the point of not being able to smell it. (I have let the kids use chocolate syrup on their waffles and French toast, so I wouldn't have to smell maple syrup.)
I will eat waffles on occasion, slathered in butter topped with blueberry syrup, or barring that, spread with almost any flavor jam.

I just remembered something...
The Mrs.'s grandparents make cornbread waffles. Use your regular cornbread batter, but bake it in the waffle iron. They're especially good with-

Piperdbh, my grandmother lived on my great grandparent's farm; grew up there, of course. They had cattle and milk cows. Long before I was born, or even my father, she did milk cows and make butter etc. She used to tell me about it.
And she used to make waffles or pancakes for breakfast quite often, at least as I remember it, usually with butter and syrup, and nothing fancy. We had a glass of milk, too, but sometimes powdered milk.

I usually just make the basic pancake recipe from The Joy of Cooking, and soak it in an amount of maple syrup that I find appropriate and my partner finds opprobrious. Hell, if she wants to eat dry pancakes that isn't my problem.
The earlier mention of dosas makes me want to eat some now...
