Gareth if you can, try to ditch the ghillies and stick to conventional lace-up oxfords; Highland brogues (the Army ones) are a nice touch if you are able to find a pair.
AFAIK the dress sporrans with a silver cantle are best left for evening wear. If you can find a horsehair sporran (the massive flowing ones) it would look rather smart if the occasion calls for it, but the key is to wear one that's understated enough for, and co-ordinates well with day-wear.

In my opinion, virtually any colour (especially brown, tan, or grey hues) of tweed jacket and waistcoat would look smart with the Lamont tartan. Of course, depending upon the weather, the waistcoat can be left at home altogether. A simple leather sporran in brown or black leather with a matching leather strap would work, or perhaps a full-mask sporran, which is appropriate for any occassion.
I agree, HRH Prince Charles is always a good source of inspiration for Highland attire, and there was a thread started a while ago that features various photos of him wearing the kilt. Use the 'search' option to locate the thread.

What do you have, and what's your budget?
On the cheap end, an arran/cable/shetland/fairisle jumper/sweater... Or a tattersall shirt with a belt...
Most tweeds are earthy colours which should go well with lamont colours... Modern ancient or weathered...
Personally I like ghillies, but brogues in black or brown would go well...
Kyle made some good suggestions, but depending on where you're going some people might not appreciate you having a dead animal front and center... And the last thing i'd want is $1000 of gear getting trashed because someone had a different opinion...

The full horse hair sporran is not for me, nor the Full mask, but agree that metal cantled should be left for evening wear. As ever great to hear different opinions.

and this is wht I chose for day wear last Sunday for a cruise on the bay. Lovat blue Argyle jacket, pale yellow sweater, ancient green Lochcarron tie and dark green hose with argyle top. The kilt is Stewart Hunting ancient.

My vote is for "Highland Green" for the tweed (darker than Lovat Green):
