Thank you Miah for posting that pic of the sewn down pleats. Seamus, keep in mind... you're not sewing more than 1 pleat TOGETHER, you're just sewing the VERY outter edge of each pleat to keep it Crisp.
To re-address your question, when you wash cotton Poly, the pleats WILL come out... There's another "less expensive" kilt maker on this board that makes 99% of their kilts out of Cotton Poly. When you wash them, you just HAVE to iron them. There was no way aroung it (without altering the kilt) That's why I decided to start sewing down the tips of some of my kilts (a year ago)... I AM LAZY when it comes to ironing.

If the fabric is wool, then I assume the pressed (not sewn down!) pleats hold up better than the cotton ones?

Without a doubt.
Wool pleats stay in place very well.

Thanks for taking good care of my son way back when, Rocky. That's right, this is the kid that inspired me to take up the kilt by his manly example. He's my hero. He hasn't been active for a year or so, but he did mention he had been a member and forgot his username. I just gave it a guess and found him. Havin fun reading through his threads and posts. He is doing great, Rocky. Just started college at Northwestern. The last year or so in high school he kept busy with acting, getting a Celtic contemporary band together, winning a national achievement medal in German proficiency, 16th in a class of 780, male lead in the school musical "Anything Goes". I'm sure once he settles into the new school I can persuade him to return and give us an update. I expect he will continue to wear his kilt off-and-on at school. I'm trying to talk him into coming down for the Stone Mountain Games in October.
