I am pretty lucky, the butcher down the street has these all the time (haggis too) for about $2. Having a British bucher shop down the street is pretty nice, even if you have to see all the Liverpool FC gear all the time I second the suggestion for a good mustard, though I am not a big fan of dijon.
Some good looking recipes here so far.

I've been making Scotch eggs for years, though not lately because the doctor and my wife are worried about my cholesterol.
I use bulk breakfast sausage. Here's a hint - wet your hands to keep it from sticking to them while you form it around the eggs.
You can serve them as rounds if you cut very carefully. Serve them with mustard, as someone stated above.
A wonderful snack. More of a meal, really.
