Great photos!
A very classy outfit there.
I'm glad my old Victorian cantle has found a great home! It does match in with your fantastic Victorian crossbelt & waistbelt set pretty well.
About regulation doublets, they're so rarely seen nowadays, and so wonderfully "old school". Take note of the jackets in this recent photo of some of the world's leading pipers:

Ah... Gordon Walker... the regulation doublet, the red laces and buckles on the ghillies...
About Robertsons, somebody once put it succinctly:
Robertsons: Lotsa wood, lotsa ivory, lotsa sound.
I was attired much more plainly at the Burns supper I piped at. My pipes are c1900 Lawries.

You look fantastic! the only problem I see is that dirk! A dirk yould look just fine to me with that but I detest those plastic things! There are some good ones out there at a reasonable price. Grab yourself one of those and you will be unstopable!!!!

Um... how did you reach the conclusion that the dirk is plastic?

He's right it is plastic.
I have it because i'm the pipe major og a police pipe band and my sgian stone is blue and the dirk has red so it's kinda like the flashing lights.
Another reason i got it was because it was $10 instead of $400 for a real one with carnigorm.
It's the only non authentic piece of highland wear i own.

There was a guy on ebay who had some dirks made up in the old victorian style. He had them made in India but they are top noch work. The only issue I saw with them was the plating is a little thin. I own one and I have to say I am very impressed with it. I will try to find out who he is. I think I paid 50 dollars for mine. The stones are red poured glass so they are rounded not faceted but they are as close to the old style as you can get without paying a fortune. I know its plastic because I bought one for parts and pieces to make a jacobite inspired dirk for myself.

The dirks I was talking about are very fine Scottish made examples, a silverplated one stamped RG Lawrie Glasgow and a hallmarked sterling one (I dont' remember the silversmith offhand, from Aberdeen).

Probably some sort of regular shoelaces would work fine. Round ropelike ones, not the flat ones. Our local shoe repair shop has them in many different colours.
The leather tassels are another matter! You might have to make them from scrap leather, or just use your existing black tassels.
