    An over-easy egg sprinkled with salt and pepper sandwiched (if you will) between two slices of white bread spread with mayo on one and catsup on the other.

    Oh and how could I leave out one of my faves - A top notch, pressed Cuban? Fatty pork roast, ham, swiss, pickles and mustard? darooool, daroooool.

    Thanks Jim, but I've tried the gluten free imposters/recipes and that stuff in no way can be considered food. Better to just remember fondly the good stuff, rather than choke down a mere facsimile. Without good bread, all you have is a substandard sammich, and there is no excuse for that!

    Doh! I left out the Cubano as well.

    Getting the right bread for Cubanos is so difficult around here.

    Homemade whole wheat bread with a portobello cap that's been grilled with cumin and rosemary. Atop that, spoon a little hot salsa and some vegan cheese, then a thick slice of fiery onion and a few sheets of crisp lettuce. Press it all down and eat it with your teeth.

    A BELTCH using fried bread. Bacon, Egg, Lettuce, Tomato, Cheese, Ham. Depending on how long you have before your next blood test, the bread can be fried in the bacon fat, or in butter. If using a sharp cheese I find a good sourdough works well. Of course, it is also possible to do this with toast (but really, why would you?).

    Articifer, getting decent bread for a cuban is very hard to do here also. We usually had to roll the dice and hope that whichever french or italian loaf we picked up would have the right bite to it. Occasionally we got very lucky, but you are right, the bread is the key to this baby!

    The muffuletta is my favorite by far, but I have to admit that a good pressed cuban sandwich also hits the spot!

    Daily it is honey ham, american cheese and lettuce with musturd on whole wheat. Boring I know, but quick and satisfying. Frequently for breakfast drop the lettuce musturd and put it on a bagel with butter.
    If time isn't an issue, and the wife has bought out the deli, then a deli roll with brown musturd, ham, turkey, pastrami, lettuce and dill pickles is great delight.
