I'm okay on pancakes, but prefer crepes - thinner, with cinnamon & butter & a bit of brown sugar.

Thank you, that sounds very good. I would guess some sort of spread could be made from pureed pinion nuts to go with those.
I tried to ask my inner curmudgeon before posting, but he sprayed me with the garden hose…

Okay, so it's breakfast you want. I do an old fashioned full country breakfast from time to time and on all the holidays.
Grits, the real kind not that instant cap. 4 cups water, 1 stick butter, 2 teaspoon salt, bring to a boil add one cup grit stir well to prevent sticking and lumps. Reduce to simmer and cook at least 20 minutes stirring often.
Bacon, save the grease.
Sausage, either patty, link or smoked. Or all three.
Country ham sliced and soaked to remove salt. Fry it if bake if you must and save the droppings.
Hash browns. Half a dozen white potatoes julienned, one cowhorn (cayenne) proper diced fine, one to two onions diced. Fry the payers and pepper add onions halfway through. Fry till brown add salt coarse ground black pepper, a dash of red and paprika.
Pancakes, the buttermilk kind.
Biscuits
Eggs to order, usually over medium. Three for me.
Sausage gravy, light roux with equal parts bacon grease and flour add sweet milk to make gravy that is just this side of thick. Season with salt and just enough STRONG black coffee to cut the sweetness of the milk and no more. Add crumbled browned sausage and finish with fresh coarse ground black pepper.
For the finale, red eye gravy. Mix STRONG black coffee with brown sugar or molasses, equal parts, and add to the ham drippings. Reduce down to a thick sauce, add back the ham slices and enjoy on a hot biscuit.
In season I also do a mean asparagus omelet with hollandaise or fresh vegetable omelettes.

It could, I suppose, but I don;t have any pinion nuts. I'll have to take your word for it.

While other sites may be more famous, my wife first posted Cinnamon Roll Pancakes on her blog a couple of years ago--both normal Cinnamon Roll Pancakes and baked Cinnamon Roll Pancakes are now on the site.

Maybe my family is different since no one has mentioned this but I always grew up putting peanut butter on my waffles. To this day I still do it along with my whole family. I can't eat waffles without it. When I stay at hotels on my travels, I bring my own jar of Peter Pan with me for breakfast.
