Martini (note: when I was bartending, Martini meant gin martini, you had to ask for a vodka martini, now it's the other way around). Classic recipe is to 1 1/2 oz. of Gin and 1/2 oz. of Dry Vermouth (Martini & Rossi?), pour over ice and shake or stir, strain into a martini glass with an olive. Some folks use 2 oz of gin with just a suspicion of vermouth.
Gin Gimlet - 1 1/2 - 2 oz of gin and 1/2 oz of Rose's Lime Juice, ususally served on the rocks.
What he said. As for the Gin and Tonic, the lime is a must.
