Try substituting about a third of the sausage meat with crumbled or finely chopped black pudding - taste sensation!

I do mine with a slight twist, I add crumbled bacon to my sausage mix, and instead of breading and frying mine I put them in the smoker for a couple hours, after enjoyed warm I take the cold leftovers, split em, scoop the yolks and devil them, add a bit of sriracha sauce to the yolk while deviling them.
Fantastic variant of what I grew up on.

Horrible things. In addition to being not very nice to eat (as far as my taste buds are concerned) they are a staple of my wife's family Easter picnic's ............. Yes you will go and yes you will enjoy it, no you cant bring your fishing rod. You will roll eggs and HAVE FUN. Have you ever been on a picnic, Easter or otherwise in late March / early April in Scotland? It's not warm enough to make sitting on a big rug in the open air eating Scotch Eggs, or anything else, with whining kids, moody teenagers and arguing / grumpy pensioners, a pleasurable experience. One day I will look back and laugh, hysterically probably.

I fear the smoked paprika might get lost with the big smokiness from the pit, as for beverages, I like my wee heavy I brewed in a different thread, or something like a nice oatmeal stout. Really just a beer that compliments the flavors, I would think a big bold IPA would be too many conflicting flavors.

I finally made them today. Wow, they were awesome! I just used country sausage and Panko breadcrumbs. I didn't fry, just baked. I ate 3 and need a nap now.
