I've been home brewing for close to 20 years, of course I've slacked off as of late...haven't really brewed any beer in a couple of years now, but I have tried my hand at ciders and similar beverages. Would Like to get into lagering, but since I live in Florida, that would require a refrigerating unit to make that a reality.
Letting the spent yeast and other drub settle out is a good way to clarify your beverage, adding clarifying agents is sometimes a must...
As you get more into it you'll find that you'll want to keg your beer rather than bottle it...less work.
Good luck with brewing.
