For multiple quotes, hit quote for your original, then hit quote again for others that you want. Paste them in your original reply and move things where you want them. It's a bit of work, but pretty easy once you get the hang of it.
The multi-quote function is much easier. It's the little " symbol next to the quote button. Just hit it for each person you want to quote, then go to the bottom and hit "post reply". Those quotes will all be there, and you can edit them as needed.
As for just quoting part of a person's reply, you can do exactly what you said, which is to quote their entire post and then edit out what you don't need. Or, you can just highlight the text you want to quote with your mouse (from their original post) and hit CTRL-C. Then go down to the quick-reply area and type in the quote tag, hit CTRL-V to paste it in there, and close the quote tag. I do this out of habit, as it keeps my momentum in typing, without having to go highlight stuff and delete it.
