Moriarity would never list all his crimes to Sherlock, they are both geniuses and already know everything about each other.
To be fair the only place Moriarty is mentioned while living was in the Final Problem, though I agree Moriarty would not confess everything to Holmes. Holmes of course would have deduced all before Moriarty could confess at any rate.
