Chris was perfectly correct in saying that you should look for a jacket pattern with the collar you want and alter the sleeve/armhole to get the vest pattern.
You'll find with all the vest patterns that have been linked that the collar is either not notched, or if it's notched it is only a 'laid on' collar. This means that it only is laid on the front of the garment and not the back. You won't achieve the stand collar like the Orvis vest in any of the patterns linked.

I can't find a good line drawing of the shirt, but it looks like the collar is right.
Do a trial with heavy fabric, shape the hem, alter the armhole. For the armhole you may need to adjust where the shoulder ends, and depending on how you are going to wear the vest, either make the armhole opening smaller by lifting the side seams, or make the armhole bigger by dropping the side seams.
Further, if you go with a jacket, you'll find you might need to go a size smaller. For a shirt pattern, you'll need to go smaller if it's loose fitting. Don't go by size of the pattern, ALWAYS compare the stated measurements with your own before choosing a size.
